New Gastropub Planned for Plainfield

Downtown Plainfield diners were disappointed earlier this year when wine bar and restaurant Bin 48 closed its doors.

But another business is getting ready to set up shop in the location, which also formerly housed O'Sullivan's Pub, at 24205 W. Lockport St.

Rafael Gomez — who was previously a manager at Tap House Grill — said he plans to open up a new bar and eatery called Sovereign.

In an email to Patch, Gomez said the project is still in the "very early stages."

"Conceptually, it will be a craft beer focused farm-to-fork gastropub," Gomez said, adding he and his girlfriend plan to open the new business as soon as their funding is in place.

Bin 48 owner Kathleen Hammack announced in January that she had decided not to renew the lease on the restaurant, which opened in 2009.

Gomez said he doesn't have an opening date set yet, but hopes to be up and running by mid-July to take advantage of the location's outdoor patio.
